Our food philosophy is simple; cook over hot coals, choose from a variety of Mexican & Mayan herbs, only use fresh products, most of them locally grown and organic, to ensure the best quality in every dish.

Our selection of cocktails cannot be found anywhere else in the world. Crafted from local organic herbs, fruits and tinctures, our specialty mezcal, tequila or rum signature cocktails will leave you wanting more. We also have a selection of artisanal craft beers from local Mexico brew masters.

Our executive chef Mauricio Jervis learned his skills working with some of the world’s best chefs. In Europe with Gordon Ramsey’s 3 Michelin star restaurant at Royal Hospital Road, then in Quebec with Chef Martin Picard at Au Pied de Cochon and Cabane à Sucre Au Pied De Cochon.

Signature Cocktails

Mojito Del Cielo

Flor De Caña white rum, muddled mint, sugar, limes, cucumber and watermelon, then topped with coconut water, a splash of club soda and garnished with sugarcane.

Portal

Made the same as a classic mojito but using Honey Jack Daniels, and served in a pecan smoked cocktail glass, garnished with sugar cane.

Canadiense

Canadian Club Rye or Crown Royal Rye, canada dry ginger ale and probiotic ginger beer. Garnished with a floating raw ginger wheel topped with canadian maple syrup along with a cinnamon stick.

Aldea Sunset

Cazadores Silver Tequila with carbonated orange juice, a splash of Blue Curacao. Garnished with chamomile flowers.

Diablito

El Recuerdo de Oaxaca Mezcal, spicy tamarind vodka, hibiscus simple syrup, carbonated orange juice, garnished with spicy tree chili pepper and fresh hand cut basil.

Roseberry Caipiroska

Smirnoff Vodka, muddled limes wedges with sugar and rosemary buds, topped with raspberry malt liquor, garnished with a rosemary stem.

Bombay Baby “Frozen”

Bombay Gin, Blue Curcacao, Blackberry Liquor, agave simple syrup, black currant juice, freshly squeezed lime juice, blended with ice and garnished with an orange or lemon twist.

Jon Bon Jo V

Crown Royal Rye, muddled cherry sugar and orange, ginger ale, topped with mint egg whites and angostura bitters.
